Living on potatoes etc. for a year

In the case of an emergency: economic collapse, war. environmental or food, you need to have an emergency supply of food available for at least 6 months.  This list is not exhaustive. You can add to it with a couple of days of research. The point of this article is to get you off your but and start preparing for food, money and power shortages that are already happening. You should not need much convincing as of April 2022 with the food shortages happening because of the war in Ukraine (Russia and Ukraine supply huge amounts of cooking oils, grains, energy and fertilizers to the world)  and fuel  prices.  This is on top of all the supply and production problems caused by the covid-19 pandemic.

The food you choose to store will depend on how nutritious, how long it will last and whether you need to cook it or not

Some  people say that dried foods like rice and beans are easy to store but they take a lot of cooking time and fuel, which you may  not have.

Milk is a very nourishing food, especially mother’s milk combined with potatoes, dates and oatmeal you can survive for a year.

Dates are a very good semi complete food.

Here are my recommendations on what to buy and store to keep you alive for quite a while, that are easy to store, reasonably priced and have the needed nutrients.

This list can be substituted depending on the conditions.

If you have energy to cook your food then eat your dried foods first. Lots of spaghetti, beans and chilli, pizza, flat bread with what vegetables you have access to. With some dates and freeze dried fruit. Also boil and bake lots of potatoes

When you have no energy then you need to eat canned or powdered potatoes, dates, milk and oatmeal.

One way to do this would be to soak oats and dates in water and add powdered milk and some freeze dried fruit or any other fruit nearby. The potatoes at this stage would be powdered as would the eggs.

All the other canned foods,  freeze dried foods,  peanut butter, energy bars etc. would supplement this.

Finally if you can forage for food then do it. Berries, fish, rabbits, deer, shell fish, seaweed (most are edible), mushrooms, honey, insects and birds. Learning to fish, hunt and forage is fun, saves money and is healthy: even in normal and happy times. People in south East Asia eat a large amount of foraged food. Leaves, herbs, insects, fruits, nuts, mushrooms,  fish and birds in their daily diet. It is everywhere once you know  how to forage, healthy and it saves them a lot of money.

These are the most important things to stock up on NOW. Depending on how much money you have and how much storage you have, either buy it all now or some every week. You will never regret it. Many of these foods you already eat. When shopping try and buy and extra jug of oil and packet of oatmeal etc.

  4. Flour – wheat, rye etc.
  5. Powdered potato
  6. Normal and sweet potatoes, fresh in a root cellar or preserved in mason jars.
  7. Freeze dried fruit
  8. Big bottles of olive oil
  9. Peanut butter
  10. Rice, beans, lentils, spaghetti and macaroni  when you have power and water to cook them
  1. Canned fish,  baked beans, soup, fruit, chilli, tomatoes
  2. Peanut butter and jam
  3. Whole grain crackers and cereal
  4. Baby food and formulas
  5. Energy Bars
  6. Freeze dried meat and eggs
  7. yeast
  8. Sea salt, sugar honey and pepper
  9. Water –  lots of water
  10. Beef Jerkey

The thing that makes potatoes special is that for a starchy food, they have an unusual amount of protein, and that includes a wide variety of amino acids. Still, even eating 3kg (6.6lbs) of potatoes a day would only get up to about two-thirds of the recommended amount, but you can survive well if you combine potatoes, milk and oatmeal.

Hearing this, Jackson laughs. “Oh, that’s our diet – that’s the Scottish diet from a hundred years ago. That fits right in. Potatoes, milk, and oatmeal, with some kale in there, too.”

Dates

In the Middle Eastern lands, where the date palm carries an aura of mystery and romance, there is a common belief that it is the oldest cultivated fruit tree in the world. In its native homeland, the Arabian Peninsula, the inhabitants have no doubt that it was first grown in Paradise. According to Muslim belief, the Archangel Gabriel told Adam in the Garden of Eden: “Thou art created from the same substance as this palm tree which henceforth shall nourish you.”

To the Arabs the date palm has a definite personality and human qualities. Well they might have a point for like man, if the tree’s head is severed, it will die. In the same fashion as a human limb, a frond cut will not grow again, and the palm’s crown is covered with thick foliage, like the hair on a human head.

Historians have theorized that perhaps 7,000 years ago the date palm was first cultivated in the Arabian Peninsula. From this arid land, the cultivation of the date palm spread to the Fertile Crescent. Written records by the Sumerians, Assyrians and Babylonians, found on clay tablets, describe this historic tree and its fruit. Murals depicting palms from the days of these civilizations have been uncovered which prove beyond doubt that dates were well known in the days of antiquity.

Perhaps, at the beginning of the Pharaonic era the cultivation of date palms spread to the Valley of the Nile. Paintings found in the tombs of the Pharaohs indicate that they were known in that ancient land, at least since the time that the hieroglyphics were created.

In later centuries, Phoenician traders carried the date palm from the Fertile Crescent and Egypt to North Africa and Spain. However, in Spain the date palm was not cultivated on a large scale until 712 A.D after the Arabs occupied the Iberian Peninsula. In the Alicante province of the eastern coast of Spain palm orchards, first established by the Arabs, are today, still flourishing.

From Spain the Conquistadors brought along with them the date palm to the Americas. However, as a food crop, in both North and South America, it did not thrive until this century, and then, solely in a few locations. In the U.S., at the beginning of the 1900s, the date palm was introduced from North Africa to be planted on a commercial basis.

The Algerian Deglet Noor was the first type of date cultivated on a large scale, and remains the most important variety grown in the U.S. Today, the Coachella Valley of California is the heart of a prosperous date industry. Yet, despite its propagation through many lands, including the U.S.A., the date tree is still, in the main, planted as a food crop in the Arab countries. Iraq, the United Arab Emirates and Saudi Arabia account for most of the world’s date supply.

There are perhaps, several thousand species bearing fruit that range from the size of a tiny plum to a large orange. A single tree, when full grown, will produce up to 300 lbs. of fruit, hanging in great bunches weighing l0 to over 30 lbs. each – some containing as many as a thousand dates. These picturesque clusters of dates need at least six months to mature. They ripen in four stages: kimiri, the green stage; khalal, when they turn yellowish with a red tinge; rutab, the first stage of ripening and; tamar, when they fully mature. In the last stage, dates are light brown, plump and glossy with a sweet pulp.

In the lands where civilization began, the date palm is believed to be the oldest food plant known to man. The fruit, which is exceedingly rich and nourishing, is ideal for the daily diet. If need be, a person can live a healthy life, for many months, with a menu of only dates and milk – eaten for centuries in the Arabian Peninsula.

Dates are without doubt one of the world’s most complete foods, providing vital nutrients for the body. They contain carbohydrates, protein, vitamins A, B, D and G, iron, magnesium, potassium, phosphorus, calcium and copper. They contain more sugar as compared to other fruits, but their sugars are easily absorbed and not acid forming. Dates have enough fibre, about 10% of their weight, to provide the body’s needed roughage. The Bedouin of the Arabian Peninsula must have had an inkling of their food value. They called dates `bread of the desert’, and considered them a miracle food.

From the days of early civilizations humans have believed that dates have medical qualities. The Bedouin maintain that a diet of this rich fruit can cure virtually any ailment from a simple cold to impotence.   For untold centuries, many believed that dates cured the diseases of the lung and chest, steadied blood pressure, helped to relieve haemorrhoids, gallstones and varicose veins, and cleared the intestines.

In addition to its fruit, much valued as a nourishing health food, the other uses of the date palm are of great economic importance. Its fibre is utilized for ropes and mats; its wood for building materials and furniture; its leaves for roofs, baskets and hats; and the stones of the fruit are crushed for animal food. Also, the sap, called the ‘drink of life’ by the early inhabitants of the Middle East, is made into sugar, vinegar or alcoholic drinks, and the tree acts as an umbrella for other fruits and vegetables growing in its shade. In the domain of food and shelter, it is said that there are at least 800 uses for the date palm.

Dates can be eaten fresh or dried, made into jams and syrups or utilized as ingredients in the preparation of other foods, such as confectioneries, pastries and even meat dishes. In their native homelands of the Middle East and North Africa, dates are used in countless dishes, from appetizers to entrées and desserts. Living in the midst of a golden harvest of dates, the peoples in these lands have long realized that this historic fruit is an excellent staff of life.

Surviving just on potatoes

In an attempt to lose weight and improve his relationship with food, Andrew Taylor has decided to eat nothing but potatoes for a year. But is this approach likely to work, or will he run out of nutrients? And could he have chosen a better single food to live on?

Just over a month into the diet, Taylor posted a photo on Facebook of some unfinished mash potato on his plate. This is a nice illustration of “sensory-specific satiety” – the theory that the pleasure we take in consuming a single food goes down as we eat more of it, so we stop eating so much.

He is probably feeling the benefits of his weight loss (10kg in the first month), with increased energy levels, and already will have reduced his chances of developing diabetes and other chronic conditions. But what will happen in the long term?

Enough protein and fat?

Eating around 3kg of potatoes a day will provide just over 2000kcal, a reasonable amount for a man of his size aiming to lose weight. But while potatoes are an excellent source of carbohydrates and fibre, he may struggle to get enough protein. A 120kg man may need up to 90g of protein, but this diet will provide only 60g.

Proteins are made up of a range of amino acids, including some that must be supplied in our diet, and potatoes contain a surprisingly good balance of these. But, despite spuds providing a good balance of amino-acids, there simply won’t be enough of them in Taylor’s diet.

Potatoes are also low in fat (only 9g per 3kg), so Taylor’s diet doesn’t supply enough of the two essential fatty acids (linolenic and linoleic acid), nor does it provide enough fat to aid the absorption of fat soluble vitamins: A, D, E and K.

We should also eat foods containing ready-made long-chain omega-3 polyunsaturated fatty acids, of which the only reasonable dietary source is oily fish. These fats have specific structural and functional roles in cell membranes, can act as hormones, and help to control blood pressure.

Vitamins and minerals

Taylor will get enough  thiamine, niacin, vitamin B6, folate, vitamin C, potassium, magnesium, phosphorus and copper, even allowing for losses of these nutrients during cooking. Also, he has boosted his chance of getting enough vitamins A and E, iron and calcium by agreeing to include sweet potatoes in his diet. But his diet lacks vitamins D and B12.

Exposure to sunshine in Australia means that he should be making enough vitamin D, but unless he takes a supplement his stores of vitamin B12 may well run out before the end of the year. Prolonged deficiency will result in pernicious anaemia and possibly even irreversible nerve damage. Since he is allowing himself some seasonings, yeast extract would be a good choice, to top up levels of some of the other B vitamins, including biotin and riboflavin (vitamin B2). A lack of these will affect the way that he can use the energy from his food.

Also, his diet will provide only around 6mg of zinc and he will need up to 9.5mg a day. Zinc deficiency would become obvious in tissues with rapid turnover, such as the linings of our mouth, intestine and skin, resulting in reduced immunity and wound repair, and perhaps a loss of taste buds.

Other minerals that might be lacking in this diet include chloride, selenium and iodine, since levels of these depend on the soil in which the potatoes were grown. Using an iodine-enriched salt would be helpful in terms of chloride and iodine, but his diet would probably supply only 30μg of selenium, low enough to cause deficiency in most people. This could reduce immunity and lower reproductive capacity, as well as affecting thyroid function and antioxidant status.

Something better than potatoes?

Eating only one food probably won’t do any harm in the short term. However, there is no known food that supplies all the needs of human adults on a long-term basis. Since Taylor is determined to follow a one-food diet, then potatoes are probably as good as anything, as they contain a wider range of amino acids, vitamins and minerals than other starchy foods, such as pasta or rice. If he had chosen a single animal-derived food, he would have had no fibre in his diet and a poor intake of various vitamins, minerals and antioxidants. Fruits and non-starchy vegetables are very low in protein and fat, meaning he would have to plough through a huge amount to get enough sustenance.

Green is not always healthy

As a final caution, potatoes produce solanine, a glycoalkaloid poison. The amount in tubers of commercial varieties is generally low, but potato tubers that have been damaged in some way, or stored in the light, become green and produce more solanine. Eating even small quantities of green potatoes can cause nausea and vomiting, cramps, fever, dizziness, headaches, convulsions.

The toxic dose doesn’t seem to have been definitively determined, and it’s not clear how well solanine is absorbed and metabolised, nor whether it builds up when eaten in small amounts over a long time. It’s clearly safe to eat “normal” quantities of potatoes (up to around 300g) on a daily basis, but the safety of eating ten times this, for a whole year, has not been established. But Taylor should be comforted by the fact that potatoes are a staple food throughout the world, albeit part of a slightly more varied diet.

Eat to live, or live to eat?

One food is not enough, but we don’t need an enormous range of foods. My great great grandfather, living in rural Aberdeenshire, had, like most of his contemporaries, a very limited diet of mainly potatoes, with oatmeal, kale and small amounts of fish and boiled beef. He lived into his nineties and claimed never to be bored with his diet, saying: “It’s just maet” (where the Scots word “maet” refers to food in general, not just meat). Food was fuel, rather than a form of comfort and entertainment. Perhaps that is the sort of relationship with food that Andrew Taylor is trying to achieve.
